Local supply and zero food waste

Right here in central Copenhagen you'll find a little green wonder - our Hidden Garden. This is where flowers bloom, herbs are grown and our honey bees produce their tasty honey for Villa Copenhagen.

We work with local organic farmers and suppliers to make sure, that the food we serve at Villa Copenhagen is of the best quality. At the same time we want to limit food waste and use new technology to convert food waste into green energy.

Chef and Concept

Villa Copenhagen’s F&B design and sustainable food concept owe much to Executive Chef Tore Gustafsson. The Swedish Chef was personally involved with the designs of all the villa’s F&B and beverage outlets, and helped formulate the zero-food waste and carbon-free dining concepts which support Nordic Hotels & Resorts’, the hotel’s parent group, commitment towards eco-sustainability.

Where possible, the outlets also use fresh ingredients obtained from the hotel’s hidden garden and local suppliers of sustainable produce.

Public breakfast restaurant and Rug Bakery

Situated inside the former sorting room of the Danish Central Post and Telegraph office, Rug Bakery offers a wide variety of breakfast dishes including fresh bread and pastries that makes it one of the best places to have breakfast in Copenhagen. The pastries and fresh bread are made by Rug Bakery, which is Villa’s Copenhagen’s in-house pastry house.

The spacious interior also makes the restaurant a great location to hold small events. The bakery can prepare buffet and a la carte meals for guests, as well as inside FIKA tote bags.

T37 Bar & Lounge

T37 offers a convivial atmosphere inside its timber-panelled walls, marble columns and patterned rugs. The stylishness and cosiness of the interior create a warm and inviting ambience for social gatherings among friends. The outlet also offers a selection of simple dishes to whet the appetite before dinner.

KONTRAST Brasserie

Whether you’re looking for dinner, lunch or even brunch in Copenhagen, KONTRAST’S contemporary and cosmopolitan dishes will suit you perfectly. Despite being new to the scene, the elegantly designed establishment is already ranked by many as among the finest restaurants in Copenhagen.
